The best way to honor that work also happens to be the cheapest: eat it, fresh and in season, bought straight from the women themselves whenever you can.<\/p><p>This guide covers what the haenyeo actually catch, which dishes to order, and where to find the real thing. You point and they slice: sea urchin (<strong>\uc131\uac8c<\/strong>) spooned straight from the shell, a conch (<strong>\uc18c\ub77c<\/strong>) cut open in front of you, sometimes an abalone (<strong>\uc804\ubcf5<\/strong>) that is still moving.<\/p><p>It&#8217;s the freshest seafood you will ever eat, at a fraction of restaurant prices, and every won goes directly to the woman who dove for it. A few manners:<\/p><ul><li>Pay the asking price, and please don&#8217;t haggle a 70-year-old who just held her breath at 5 metres. It&#8217;s already a bargain.<\/li><li>Bring\u00a0<strong>cash<\/strong>. The women selling off the rocks usually can&#8217;t take cards.<\/li><li>Eat it right there on the spot. A\u00a0<strong>\ud574\ub140\uc758 \uc9d1 (Haenyeo-ui Jip, &#8220;Haenyeo&#8217;s House&#8221;)<\/strong>\u00a0is a restaurant run by the village&#8217;s\u00a0<strong>\uc5b4\ucd0c\uacc4<\/strong>\u00a0(eochonge, fishing cooperative), staffed by the very women who dive that stretch of coast, with the profits going back to them. Set your expectations right, though. These are bare-bones places: plastic stools, a few tables, a TV in the corner, often nothing more. People come for the catch, and the plainness is part of the charm. You&#8217;ll find them tucked beside harbours and beaches all around the island, almost always serving whatever came up that day.<\/p><p>A few well-known ones to give you the idea (hours and days shift seasonally, so confirm before you drive out):<\/p><ul><li>\ub3c4\ub450\ud574\ub140\uc758\uc9d1 (Dodu) sits minutes from Jeju City and is famous for a rich, savoury \uc804\ubcf5\uc8fd and a fragrant \uc131\uac8c\ubbf8\uc5ed\uad6d.<\/li><li>\uc12d\uc9c0\ud574\ub140\uc758\uc9d1 (Seopjikoji) is perched above the sea near Seopjikoji and run by actual working divers.<\/li><li>\uc560\uc6d4\ud574\ub140\uc758\uc9d1 (Aewol) is on the west coast, with big windows and ocean-view tables.<\/li><li>\uc2e0\uc5c4\ud574\ub140\uc758\uc9d1 (Sineom), also on the west coast, is run by a friend from my own haenyeo school. The sea view is the real draw, a Stray Kids member once stopped in and posted a photo from here, and there&#8217;s a dolphin viewpoint nearby.<\/li><li>\uc2dc\ud765\ud574\ub140\uc758\uc9d1 (Siheung) is on the east coast, near the start of Olle Trail 1.<\/li><li>\ub3d9\ubcf5\ub9ac \ud574\ub140\ucd0c (Dongbok-ri) is beloved for its sea-urchin noodles and abalone porridge.<\/li><\/ul><p>Search\u00a0<strong>&#8220;\ud574\ub140\uc758 \uc9d1&#8221;<\/strong>\u00a0on\u00a0<strong>KakaoMap or Naver Map<\/strong>\u00a0near wherever you&#8217;re staying and you&#8217;ll almost always find one. Slow-cooked rice porridge made with abalone and, crucially, its green innards (\ub0b4\uc7a5), which turn the whole bowl a savoury jade colour. It&#8217;s comforting and nourishing, the dish Jeju mothers make for anyone who needs strength.<\/p><p><strong>\uc131\uac8c\ubbf8\uc5ed\uad6d (sea-urchin &amp; seaweed soup) and \uc131\uac8c\ube44\ube54\ubc25<\/strong>\u00a0start with a clean kelp (\ubbf8\uc5ed) broth carrying spoonfuls of fresh\u00a0<strong>\uc131\uac8c<\/strong>\u00a0(seonggae, sea urchin) that taste delicate, briny, a little sweet. You can also have the urchin over rice as \uc131\uac8c\ube44\ube54\ubc25. This is peak haenyeo eating in June and July, when the urchin is fat.<\/p><p><strong>\ubcf4\ub9d0 (bomal)<\/strong>\u00a0is the Jeju-dialect word for a top shell, a small, sweet, meaty sea snail. Try it as\u00a0<strong>\ubcf4\ub9d0\uc8fd<\/strong>\u00a0(porridge),\u00a0<strong>\ubcf4\ub9d0\uad6d<\/strong>, or the local favourite\u00a0<strong>\ubcf4\ub9d0\uce7c\uad6d\uc218<\/strong>\u00a0(hand-cut noodles in a seaweed-sweet broth). It&#8217;s humble food and some of the best value on the island.<\/p><p><strong>\ubb3c\ud68c (mulhoe)<\/strong>\u00a0is summer&#8217;s answer to heat: raw fish or seafood (conch, abalone, sometimes \ud55c\uce58 squid) in an icy, sweet-and-tangy chilled broth you drink as much as eat. Order\u00a0<strong>\ud55c\uce58\ubb3c\ud68c<\/strong>\u00a0if it&#8217;s squid season.<\/p><p>You&#8217;ll find\u00a0<strong>\uc804\ubcf5<\/strong>\u00a0prepared every which way. Beyond porridge there&#8217;s\u00a0<strong>\uc804\ubcf5\ud68c<\/strong>\u00a0(sliced raw, sweet and crunchy),\u00a0<strong>\uc804\ubcf5\uad6c\uc774<\/strong>\u00a0(grilled in the shell with butter), and\u00a0<strong>\uc804\ubcf5\ub3cc\uc1a5\ubc25<\/strong>\u00a0(abalone hot-pot rice). The Gujwa area is especially known for abalone, though truly wild Jeju abalone has become rare as the sea warms, so ask if that matters to you. And don&#8217;t skip\u00a0<strong>\uc624\ubd84\uc790\uae30\ub69d\ubc30\uae30<\/strong>, a bubbling stew of Jeju&#8217;s small native abalone.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-fc02957 elementor-widget elementor-widget-heading\" data-id=\"fc02957\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">4. When to eat what<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-170c6c7 elementor-widget elementor-widget-text-editor\" data-id=\"170c6c7\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>\u00a0Jeju&#8217;s seabed has seasons, and so do the haenyeo:<\/p><ul><li><p>\uc131\uac8c (sea urchin) is at its best in June and July.<\/p><\/li><li><p>\uc804\ubcf5 (abalone) has grown scarce in Jeju&#8217;s warming waters and is caught far less than it once was. Restaurants still serve it, but much is farmed, so wild-caught Jeju abalone is now a rare find.<\/p><\/li><li><p>\ubcf4\ub9d0 (top shell) is best from May to August, when it&#8217;s fattest.<\/p><\/li><li><p>\uc18c\ub77c (conch) peaks earlier, from March to June.<\/p><\/li><li><p>\ubb3c\ud68c is a summer dish, the one you want cold when it&#8217;s hot out.<\/p><\/li><\/ul><p>Diving itself pauses in the deep cold and during spawning bans, so &#8220;today&#8217;s catch&#8221; really does change week to week. There are now only about <strong>2,400 active haenyeo left<\/strong>, most over 70, and a \ud574\ub140\uc758 \uc9d1 or a plate bought on the rocks puts money straight into their hands and their village co-op.
